~White croaker is precious to the fishermen, not only because the collagen of the maw but also the fish itself can make a wonderful soup to strengthen the health condition as well as liver and spleen;
~The fish has been gutted, scaled and gilled (you may gently boil it with hot water in minutes, and then use a small knife to remove the scales near the fish head if necessary);

~Traditionally, when the meat is just frozen in general freezer, it is often found that it loses their original fresh taste after it is defrosted, and the appearance is dented and blackened. These problems can be avoided by IQF rapid freezing. The temperature of the meat will drop rapidly by IQF, making the ice-crystal-like molecules inside the meat small enough and evenly distributed. The cell tissues will not be damaged and therefore be kept intact. While retaining the original composition and nutrition, the meat quality and umami taste of the food can still be maintained;
~IQF is also a sterilization process to kill most of the bacteria and parasite, to make sure it is hygienic and also to preserve the fresh taste, meat texture and nutrition;

Suggested recipes :
~Steaming and frying are recommended.
To fry a white croaker, say 500g in size, simply put some sea salt and pepper and fry for 15-20 mins until it turns into golden colour, the skin will be crispy and the meat will be scented and delicious;
~To steam a white croaker, simply put scallion and soy sauce and steam it in 12-15mins, then switch off the fire and hold it for 2-3 mins. Then you will enjoy this wonderful dish;
~To use the maws making a sweet soup with red dates and wolfberries.
